The kitchen

Berlin read in three courses.

Tiergarten Salon's kitchen is led by chef Lena Hoffmann. The menu is short, seasonal, and built around what the Brandenburg producers send in twice a week. Vegetable-forward, fire-finished, with a wine cellar that leans German Riesling and Burgundy.

The sommelier is Pauline Klein. She doesn't print a list; she builds your pairing in the room, around the people at your table.

A six-seat table at the cellar door, hosted personally by the sommelier. Eight-course tasting with eight wines, each chosen the afternoon of the dinner. Reserved fourteen days in advance; a deposit holds the table.

A serious breakfast for serious mornings. Hot service brought together by a single hand-rung start; no buffets, no jet-lagged half-pour coffee. Out the door and into a cab to Mitte by 09:30.
